Lemon Pound {cup}Cake

What you need:
1/2 cup butter, softened
1 cup sugar
2 eggs
1/2 tsp lemon extract
1&3/4 cup all purpose flour
1/4 tsp baking soda
1/2 tsp salt
Glaze:
2 cups confectioners sugar
3 tbs lemon juice (fresh squeezed if possible)


Directions:
Preheat oven to 400°. Cream the butter and sugar in a large bowl. Add eggs, beating in one at a time. Combine flour, salt, & baking soda; add to the cream mixture. Fill pre-lined muffin tin 3/4 of the way. Bake 18-20 minutes at 400°. 

Glaze:
Wait until cupcakes are completely cool. Combine sugar and lemon juice. Drizzle over top with a spoon. 

For mini cupcakes: 
Pour 2 tbs in to pre-lined mini muffin pan. Bake at 400° for 9-12 minutes. 

Makes 2 dozen (48 mini)

  5. Tastes wonderful!! I constantly have trouble making lemon flavored pasteries and keeping he flavor, but the addition of freshly squeezed makes that the least of your worries..
